Protein Pumpkin Bars

INGREDIENTS

  • 1/2 cup Swerve granulated sugar substitute
  • 1/3 cup applesauce
  • 2 tsp ground cinnamon
  • 1-1/2 tsp ground ginger
  • 1/2 tsp pumpkin spice
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 4 large egg whites
  • 15-oz. can raw pumpkin
  • 2 cups oat flour
  • 2 scoops vanilla whey protein
  • 1/2 cup almond milk
  • 1/4 cup pumpkin seeds
  • 1/2 cup chopped walnuts (optional)

PROCESS

Preheat oven to 350 degrees. Combine first 11 ingredients and mix. Add oat flour, whey protein, almond milk, walnuts, and pumpkin seeds and mix. Spread batter into a Pyrex dish (sprayed with nonstick spray) bake for 30 min. Cut into small squares and enjoy!
