INGREDIENTS
- 1/3 cup coconut flower
- 1 scoop vanilla protein powder (I use Devotion Nutrition Angel Food Cake flavor)
- 2 tsp cinnamon
- 1/2 tsp vanilla
- 1/2 cup mixed berries
- 1 tsp sugar substitute (I use Swerve granulated sugar)
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tbsp applesauce
- 1 egg white
- 1 tbsp almond or peanut butter (optional)
PROCESS
Combine all dry ingredients except sugar substitute. Once mixed, add vanilla, applesauce, and egg white. Mix thoroughly. Pour into heated waffle maker. Combine berries and sugar substitute in small bowl, cover with plastic wrap and heat in microwave for 2 minutes. Remove waffle from waffle maker, slice, and top with berry mixture. I like to sprinkle with more cinnamon (because there can never be too much cinnamon!). Sometimes I drizzle with 1 tbsp Sugar Free Syrup – especially if I overcook the waffles and they turn out a little on the dry side! And, there’s always the almond/peanut butter option!
