Sprouted Grain Arugula Fig Pizza

INGREDIENTS

  • 1/4 cup chopped shallots
  • 1 tsp olive oil
  • 4 whole figs (any type)
  • 2 tbsp balsamic vinegar
  • 1/4 cup goat cheese (optional)
  • 1/4 cup low fat ricotta cheese or tofu spread
  • 1/2 cup arugula
  • 1 sprouted grain tortilla (I use the Ezekiel 4:9 brand)
  • sea salt

PROCESS

Preheat oven to 400 degrees. Cut figs in half, drizzle with 1 tbsp balsamic vinegar and place in oven for 8 to 10 minutes. Place tortilla on oven rack and toast in oven until firm and semi-crisp. Meanwhile, sauté shallots in skillet with olive oil and set aside once browned. Remove tortilla from oven and spread with ricotta cheese. Sprinkle shallots and sea salt over cheese, layer with arugula and figs, Drizzle with remaining balsamic vinegar. Bake in oven (at same 400 degrees) for 10 to 15 minutes. Remove from oven, cool for a few minutes, then slice and enjoy!
